How to Grow French Tarragon
The short answer
French tarragon is a tender perennial prized for its anise flavor. Its seed is sterile, so it is always propagated vegetatively by root division in spring or from stem cuttings, not sown from seed. Grow it in full sun to part shade in well-drained, sandy loam with low to moderate fertility.
It has shallow roots and hates wet feet, so let the soil dry between waterings and mulch to conserve surface moisture. Harvest leaves through the season, remove flowers to keep plants productive, and divide every few years to keep growth vigorous.
Planting and care
Choose a warm, well-drained site. Because tarragon dislikes saturated soil, good drainage is the single most important factor.
- 1Propagate vegetatively โ Divide roots in spring or take stem cuttings; do not try to grow French tarragon from seed.
- 2Water sparingly โ Let soil dry between waterings and mulch lightly; overwatering causes root rot.
- 3Keep it productive โ Pinch off flowers during the season and divide plants every three to four years.
Harvesting
Snip leafy stems as needed once plants are established. In cold regions, shear plants back after frost kills the top growth and mulch heavily for winter protection.
