How to Grow Saffron Crocus
The short answer
Saffron comes from the fall-blooming saffron crocus (Crocus sativus), a perennial corm hardy in about USDA zones 4 to 8. Plant corms 4 inches deep and 4 inches apart in full sun in well-drained soil with moderate organic matter.
Timing matters: plant as soon as possible in August or early September. Do not hold corms until spring — they will sprout and then die. Each mother corm produces several daughter corms before dying off, so a planting multiplies over the years and can be divided.
