Apple Bitter Pit: Identifying and Preventing a Calcium Disorder
The short answer
If your apples have small, dark, sunken spots with dry, brown, corky flesh underneath, concentrated toward the blossom (calyx) end, and the fruit is otherwise firm and not rotting, that is bitter pit, not a disease. It is a physiological disorder caused by a calcium imbalance in the fruit, and the spots often do not appear until weeks after harvest, worsening in storage.
The underlying cause is not usually a lack of calcium in the soil but calcium failing to move into the developing fruit. Utah State ties it to low fruit set, excessive tree vigor, and inconsistent soil moisture, and Penn State links it to high ratios of nitrogen, potassium, or magnesium to calcium; large fruit on lightly cropped trees are the most affected.
Manage it by removing the stresses: keep soil moisture even through the season, avoid over-fertilizing with nitrogen and avoid heavy pruning that pushes vigor, thin to a balanced crop rather than leaving a few oversized fruit, and harvest on time. Where a variety like Honeycrisp still pits, Extension recommends calcium (calcium chloride or calcium nitrate class) foliar sprays through the growing season; follow the label rather than any fixed dose.
What bitter pit looks like (and what it is not)
Bitter pit is a disorder of the fruit tissue, so the signs are internal as much as external. Utah State describes brown, sunken lesions on the skin with brown, spongy tissue beneath, typically circular and concentrated on the sides and lower calyx (blossom) end of the apple; the spots darken to brown or black and frequently worsen after a period in storage. The flesh under each pit is dry and corky rather than soft and wet.
That dryness is the key to telling it apart from a rot. A fungal or bacterial rot spreads, softens, and often smells; bitter pit stays as discrete dry pockets in an otherwise sound apple. Because it commonly appears only after harvest, a crop that looked clean coming off the tree can develop pits in the fruit bowl or cold storage, which is why growers of susceptible varieties watch for it rather than assuming clean fruit at picking means clean fruit later.
Why it happens: calcium, water, and vigor
The root cause is calcium not reaching the fruit at the right time, not necessarily a soil shortage. Penn State notes bitter pit is associated with high ratios of nitrogen, potassium, or magnesium to calcium in the fruit, and that Honeycrisp is highly susceptible. Because calcium moves with water into the fruit, anything that disrupts steady uptake, drought followed by heavy watering, compacted or waterlogged roots, makes it worse.
Vigor and crop load are the other levers. Utah State connects bitter pit to low fruit set and excessive tree vigor: a tree carrying only a few fruit channels its energy into rapid shoot growth and into growing those fruit very large, and large fruit dilute the calcium they do get. Heavy nitrogen fertilization and hard pruning both feed that vigor. So the classic bitter-pit scenario is a well-fed, heavily pruned tree with a light set of big apples in a season with uneven rainfall.
Which varieties, and how to prevent it
Susceptibility is strongly variety-driven. Utah State and other Extensions list Honeycrisp, Northern Spy, Cortland, Granny Smith, Jonathan, Gravenstein, and Delicious among the more susceptible apples, while Gala, McIntosh, and Rome are less prone. For trees already in the ground, prevention is cultural first. Keep soil moisture consistent (mulch and regular deep watering rather than boom-and-bust), avoid excess nitrogen and avoid heavy dormant pruning that spurs vigor, thin the crop so the tree carries a moderate load of moderate-sized fruit instead of a few giants, and harvest at the proper maturity because over-mature fruit pits more. When a susceptible variety still develops pit despite good culture, Utah State notes calcium sprays (calcium chloride or calcium nitrate class products) applied through the season can reduce it, used per label.
