When to Pick Pears
The short answer
Unlike apples, most European pears do not ripen to good eating quality on the tree; they are picked mature but still firm and ripened afterward. A mature pear snaps briskly and cleanly from the spur when you tilt it about 90 degrees. The green background color also pales slightly as the fruit matures.
It is better to pick pears a little early than too late. After harvest, most varieties ripen best after a period of cold storage (ideally below 40 degrees F for roughly a month, depending on variety), then finish ripening at room temperature.
How pears differ from apples
Left on the tree, many pears ripen unevenly and can go mealy or rot at the core. Picking at maturity and ripening off the tree gives smooth, buttery texture.

Maturity cues
- The fruit lifts and snaps free when tilted to horizontal (about 90 degrees)
- Green skin fades to a slightly paler color
- It is safer to pick slightly early than to wait too long
Ripening after harvest
Store picked pears cold (ideally below 40 degrees F) for a period that varies by variety, then move them to room temperature to finish ripening. A refrigerator works; a freezer is too cold and a warm garage usually too warm.
