Coffee Grounds, Eggshells, Epsom Salt: What the Evidence Says

The short answer

The three most-shared kitchen amendments have all been examined by university horticulturists โ€” notably WSU's Linda Chalker-Scott โ€” and the evidence supports far less than the folklore does. Epsom salt: there is no evidence of increased productivity unless your soil is actually deficient in magnesium, which a soil test can tell you; as a routine tonic for tomatoes or roses it has no support. Coffee grounds: a reasonable compost ingredient, but the famous claim that they acidify soil is unreliable โ€” WSU's review found the pH of decomposing grounds ranges widely from acidic to alkaline (about 4.6 to 8.4), so you cannot count on them to move soil pH. Eggshells: they do break down eventually and add calcium, but far more slowly than advertised, and the marquee claim โ€” crushed shells prevent blossom end rot in tomatoes โ€” fails because blossom end rot is usually a calcium-uptake problem (driven by irregular watering), not a shortage of calcium in the soil.

The pattern behind all three verdicts is the same and is the actual lesson: amend for a measured problem, not a rumored one. A soil test tells you whether you lack magnesium or calcium; if you don't, adding more fixes nothing and can create imbalances. Kitchen scraps belong in the compost pile โ€” where all three of these materials are perfectly good inputs โ€” rather than applied directly as targeted cures.

Verdict by amendment

  • Epsom salt (magnesium sulfate): use only if a soil test shows magnesium deficiency. No evidence supports routine use for bigger yields, sweeter tomatoes, or blossom end rot prevention โ€” WSU's review labels the miracle-product reputation a myth.
  • Coffee grounds: not reliably acidic (decomposing grounds test anywhere from pH ~4.6 to 8.4), so useless as a targeted acidifier for blueberries or hydrangeas. Best used as one ingredient among many in compost; WSU's review also notes some evidence they suppress certain fungal and bacterial pathogens.
  • Eggshells: slow to break down; if a soil test shows you genuinely need calcium, purpose-made sources like gypsum act faster. Crushed shells in the planting hole do not prevent blossom end rot, which is an uptake problem tied to inconsistent moisture rather than soil calcium shortage.

What to do instead

  1. 1Test before amending โ€” A soil test from your extension service tells you which nutrients (if any) are actually short โ€” the only rational basis for adding a mineral amendment.
  2. 2Compost the kitchen stuff โ€” Coffee grounds and eggshells are legitimate compost inputs. Composting integrates them safely; direct application as targeted cures is where the myths live.
  3. 3Fix blossom end rot with watering โ€” Even, consistent soil moisture is what lets tomatoes move calcium to developing fruit. Mulch and regular irrigation do what eggshells and Epsom salt cannot.

โš  More is not neutral: unneeded Epsom salt adds magnesium that can create nutrient imbalances, and thick raw layers of coffee grounds can compact into a water-shedding mat. Unneeded amendments carry real costs.
