Why Is My Cauliflower Not Forming a Head (or the Curd Is Ricey or Brown)?

The short answer

Cauliflower forms a good curd only in a fairly narrow, cool window, so most heading problems come back to temperature. West Virginia University Extension puts the optimal temperature for curd development at 60 to 70 degrees F and notes cauliflower is more sensitive to warm weather than broccoli; heat during heading tends to produce loose, 'ricey' curds, and WVU adds that over-mature heads take on a ricey look and are often discolored. Clemson Extension likewise says cauliflower prefers about 60 to 65 degrees F and is extremely sensitive to temperatures that are either too hot or too cold.

Two other issues are worth ruling out. Browning of the curd is commonly a boron shortage: WVU notes cauliflower can show boron-deficiency symptoms when soil pH is above 7.0 with low organic matter, and Clemson ties problems like internal browning to soil pH and nutrient balance. A curd that is yellowing or purpling from sun exposure, by contrast, is a blanching issue, and Clemson notes many newer varieties are self-blanching. Because heat, nutrition, and blanching overlap, a soil test and a check of your variety and planting date are the reliable next steps, and your Extension office can confirm a suspected boron problem before you add any.

Heat and ricey or loose curds

Cauliflower wants steady cool conditions to build a tight, white curd. Because you cannot cool the weather, this is largely a planting-date and variety problem: aim heading for a cool stretch, and if summer heat keeps ruining curds, that points to adjusting when you grow it rather than anything you can spray.

Browning, boron, and blanching

Not all discoloration is the same problem. Brown, dead patches in the curd often signal a boron shortage: WVU Extension notes cauliflower can show boron-deficiency symptoms where soil pH is above 7.0 with low organic matter, and Clemson links disorders such as internal browning to soil pH and the balance among nutrients like nitrogen and calcium. Because boron is toxic in excess, this is a case to confirm with a soil test rather than guess, and to correct only on the basis of results.

Yellowing or purpling on the outside of an otherwise sound curd is usually just sun exposure. Clemson notes some cauliflower cultivars need their inner leaves tied up over the head to keep it white, while many newer cultivars are self-blanching, meaning the leaves fold over the curd on their own. If your curd is discoloring from the sun, choosing a self-blanching variety or tying the leaves solves it; if the tissue is browning and dying inside, treat it as a possible nutrient issue and check with your Extension office.
