Grafting Fruit Trees: The Basics
The short answer
Grafting exists because fruit trees don't come true from seed: to reproduce a specific apple, you join a piece of it โ the scion, a dormant shoot with several buds โ onto a rootstock, which contributes the root system and often controls the tree's final size. The graft succeeds when the cambium layers (the thin green growth tissue just under the bark) of scion and rootstock touch and fuse. Every technique in every extension fact sheet is a different way of maximizing that cambium contact and holding it still while it heals.
The beginner-standard technique is the whip-and-tongue graft, done in spring on dormant material: choose a scion and rootstock of the same diameter โ ideally no more than half an inch โ make matching sloping cuts on each with single smooth knife strokes, add a second 'tongue' cut a third of the way into each face so the two pieces interlock, fit them together so the cut surfaces (and thus cambium) align on both sides if possible, then bind the union with a rubber band, grafting tape, or film. One hard rule saves beginners the most disappointment: graft within a species. Most apples take on apple rootstocks and most pears on pear, but an apple scion will not take on a pear rootstock or vice versa.
Whip-and-tongue, step by step
- 1Match diameters โ Select dormant scion wood and a rootstock of equal diameter, preferably no more than 1/2 inch โ equal size is what lets the cambium layers line up.
- 2Make matching sloping cuts โ Cut identical long diagonal faces on rootstock top and scion base, each with a single smooth draw of a sharp knife. Ragged cuts heal poorly.
- 3Cut the tongues โ Make a second cut about one-third of the way into each sloped face to form interlocking tongues โ this is what makes the joint mechanically strong.
- 4Fit and align cambium โ Slide the pieces together so the cut surfaces match, ideally on both sides. If diameters differ slightly, align the cambium along one side perfectly rather than centering.
- 5Bind and protect โ Wrap the union firmly with a rubber band, grafting tape, or film to hold it immobile and keep it from drying while it heals.
โ The scion should have several dormant buds and be fully dormant when grafted โ collect scion wood in winter and store it cold and moist until spring grafting time.
What grafting buys you
- The variety you want on the roots you need: some varieties have great fruit and weak roots, some the reverse; grafting combines the strengths of both.
- Size control: rootstock choice is how dwarf and semi-dwarf trees are made.
- Multi-variety trees and topworking: the same skill lets you add varieties to an existing tree or convert one variety to another.
- Its limits: compatibility stops roughly at the species line, success rates improve sharply with knife practice, and a new graft needs a season of protection from drying, birds, and enthusiastic pruning.
